Big pot of leather britches for supper

Wonder what the poor folk are eatin’. Smoked hog jaw in them too.

That actually sounds pretty good. I was wondering if any store actually sells backbone anymore? It’s good to cook with beans

Backbones are good and I really like feet in my soup beans but nobody else will eat them.

I’ve never tried the feet. There really ant nothing I don’t like in a hog lol

Back bones can be found momma use to get them somewhere. She LOVES back bones. I’m fine with feet in beans just don’t ask me to chew on all that cartlidge I never was into it. Flavoring is fine with me though.
Them beans your eating are they a greasy bean

No, greasy beans make the best shuck beans though. I like the gristle on the feet. Only thing that bothers me is all the little feet bones. On my soup beans I’ve found the best ones are with salt pork and a piece of smoked both in there. I could eat soup beans every week for several days.

So far I’ve eat them everyday since Friday before last. We usually have a pot a week, daddy growed up eating them with every meal.

I too like soup beans, my favorite way of making them is over an open fire of oak and hickory in a dutch oven, it seems to impart smoke flavor into the beans.

A big pot of soup beans used to be cheap but you’ve got twenty bucks in one now. Still cheaper than steak for the several days they last but they’ve gone up like everything else.

I like salt meat in um. Honestly Im happy with a big spoon full of lard, when we run out of are own salt meat that’s what we use can’t get much cheaper then that.

We always save the leftover grease and pieces left from a baked ham. We’ll freeze and put in the next pot of beans. Poor people got poor ways.
Stacey never would use store bought lard but she loves rendering our own and using that.

I have used it but I prefer ares, we made 7 gallons last year bout time to make some more.

We raised a cut short greesey bean thats really good they got a hull you can cook and eat, thats why I asked you what kind, some of them hulls ain’t to good you gotta shell um.
We didn’t raise none this time but still got plenty of seed tiny little brown bean really good
