Elderberries and kudzu bloom

Been gathering them for Stacey to make syrup. Hard to pull over on side roads anymore without getting run over. People don’t slow down and even if other lane is completely clear they just barely get over enough to miss you. I have a feeling they only miss you because it’d slow down their day if they had to deal with it. I wondered how many that passed me had any idea whatsoever what I was doing. Kudzu is blooming, thinking about making some jelly. Anyone ever made jelly out of Russian or autumn olive berries? Dude says it’s good.

Not the autumn olives but the elderberry we have. Wild grape jelly is good to but sure does take a bunch.
I’m pretty sure that’s the only reason they miss us at work cause it’s just gonna be a big time eating fuss if they do happen to hit us. Very self centered people know days.

With enough sugar and Suregel you can make jelly out of sand rocks.

Yep! The World is full of self centered idiots, that get even more crazy when they are behind the wheel these days! … As to jelly making, I have not tried making any from Kudzu; However, I have made redbud, dandelion, and forsythia bloom jelly. The redbud has a mild grape flavor to me. The dandelion and forsythia jellies had a kind of lemony and mild honey taste I thought. I have made maple syrup in years gone by, and it was good; but you need several gallons of sap to make a quart jar of syrup if I remember correctly. . It made the house smell good, but I’m sure I spent more on an electric bill trying to boil it down, than what it would have cost to go buy it!

Kudzu bloom jelly tastes like apple/grape to me. The blooms smell very good.

It’s around 30 gallons to a quart. And to me that maple flavored corn syrup from the store ain’t the same. We boiled down a half a gallon this year with about 5 dollars worth of propane.
Yeah I guess if you put enough pectin and sugar in water you could make water jelly.

On elderberries seven Kroger bags full make a gallon of cleaned berries. This is on wild ones. I think the tame ones are bigger. She’s made a medicinal elderberry syrup that’s good. Says it’s good for lots of maladies.
