Do you only salt cure the hams and shoulders, or do you mix salt/ pepper/ other ingredients, and or smoke them too?
Black pepper red pepper slag and brown sugar no smoke
Same mix on bacon but then smoked
I can smell it cooking now just thinking about it!
I love salted down side meat.
Been working snow all week. Trying to keep are hogs from freezing solid. Finally got a break last night and got one worked up. Finish up today. The hese hogs is a bit leaner and ain’t gonna have much lard but still be plenty of sausage and hams, cut the solders into steaks pork chops man oh man I can’t wait.
You folks ought to make a you tube video of salting and curing your hogs. I bet you could teach a bunch of people how to do it, and maybe even get a few bucks in your pocket due to the numbers of people watching maybe. I think a lot of the younger generation is starting to be interested in being more self sufficient, and not being as reliant on the big business food suppliers!
