Help with canning meat

Anyone can their deer meat? I started doing it last year and like it much better than other ways of eating it. I did a batch last night and this morning had two jars that did not seal. Did i do something wrong or is that just part of it?

There are good publications at your local extension office on canning meats as well as other foods. Might want to get to know the FCS agent there.

Some just don’t seal I always eat them quick and go on.
I clean my jars then cold pack wipe the rim use new lids and hardly ever have meat or fish not seal.

It just happens sometimes; Put those jars in the fridge, and eat within a few days. I have better luck with the name brand lids, and make sure you wipe the lip of the jar real good with a damp cloth before putting in the cooker. Good luck!

Learch try wiping your jar mouths with white vinegar after you fill the jars, it seems to do better than just using water.

Ok. I wiped them with a wet paper towel a couple times each. I will definitely try the vinegar
